  • 4 Chunk Steaks (4oz)
  • 1 lb Cherry tomatoes cut into halves
  • 4 medium cucumbers, peeled and slice into ¼ inch rounds
  • 1 red onion, thinly sliced into rings 
  • 1 cup Kalamata olives, pitted and halved 
  • ½ lb feta cheese (or plant-based alternative)
  • 1 head oak leaf lettuce
  • 4 leaves little gem lettuce
  • 1 bunch of arugula
  • Sea salt
  • Freshly crushed black pepper
  • 3 Tbsp neutral frying oil

Dressing:

  • 1 shallot, minced
  • 1 full tsp of dijon mustard
  • ⅓ cup good quality balsamic vinegar
  • ⅔ cup extra virgin olive oil
  • ½ tsp sea salt
  • ½ tsp freshly crushed black pepper

Garnish options:

  • Toasted pine nuts

Instructions:

1. Prepare the Dressing

  • In a small jar, combine the minced shallot, Dijon mustard, balsamic vinegar, olive oil, sea salt, and freshly crushed black pepper.
  • Secure the lid and shake well until the dressing is emulsified. Set aside.

2. Cook the Steaks

  • Heat a pan on medium-high heat for about 2 minutes.
  • Add the oil and place the 4 steaks in the pan.
  • Sear one side of the steaks for about 2-2 ½ minutes, lightly moving the pan from time to time until the steaks are deep brown.
  • Flip the steaks to the other side and cook for an additional 2 minutes, or until nicely browned.
  • Remove the steaks from the pan and set them aside to rest for 3 minutes.
  • After resting, thinly slice the steaks.

3. Assemble the Salad

  • In a large mixing bowl, combine the halved cherry tomatoes, cucumber slices, and mixed lettuces (oak leaf, little gem, and arugula).
  • Season with sea salt and freshly crushed black pepper.
  • Lightly toss the salad with 5 tablespoons of the prepared dressing.

4. Plate the Salad

  • Arrange the dressed salad on individual plates.
  • Place the thinly sliced steak on top of the salad.
  • Arrange some onion rings over the steak slices.
  • Drizzle a little extra dressing on top of the steak slices.

5. Garnish and Serve

  • Crumble feta cheese over the salad.
  • Optionally, sprinkle with toasted pine nuts for added texture and flavor.
  • Serve immediately and enjoy the Mediterranean flavors of this hearty salad.
