  • 4 Chunk Steaks (4oz each), sliced very thinly (⅕ inch thick)
  • 2 Tbsp olive oil, divided
  • 1 medium yellow onion, sliced thinly
  • 1/4 tsp salt
  • ½ tsp freshly ground black pepper
  • 8 slices of provolone cheese, white American cheese, or Cheez Whiz (or plant-based alternative)
  • 4 hoagie rolls

Instructions:

1. Caramelize the Onions

  • In a large skillet, heat 1 Tbsp of olive oil over medium heat.
  • Add the sliced onion and season with 1/4 tsp salt.
  • Cook, stirring often, until the onions are caramelized, about 12 to 15 minutes.
  • Transfer the onions to a plate and set aside.

2. Cook the Chunk Steak

  • In the same skillet, heat the remaining 1 Tbsp of olive oil over medium-high heat.
  • Add the sliced Chunk Steak to the skillet and cook, turning occasionally, until the steak reaches your desired doneness, about 5 minutes.
  • Season with salt and pepper.

3. Combine Steak and Onions

  • Return the caramelized onions to the skillet with the steak.
  • Toss to combine, then top with slices of provolone cheese.
  • Cover the skillet and cook until the cheese is melted, about 3 minutes.

4. Prepare the Hoagie Rolls

  • Using a serrated knife, cut into the long side of each hoagie roll, being careful not to cut all the way through.
  • Warm the hoagie rolls in a dry skillet over medium heat for 1-2 minutes, if desired.

5. Assemble the Sandwiches

  • Divide the cheesesteak mixture evenly among the hoagie rolls.
  • Serve immediately while the sandwich is hot and the cheese is melty.
