Ingredients:

  • 4  Steakhouse Cuts (6oz) 
  • 8 5-inch wood skewers

Tzatziki:

  • 1 quart full fat Greek yogurt (or plant-based alternative)
  • 6 medium cucumbers
  • 3 cloves of garlic, grated on a micro plane 
  • ½ bunch dill, finely chopped 
  • ½ bunch mint, finely chopped 
  • 2 Tbsp extra virgin olive oil

Tomato salad:

  • 1 lb sweet red cherry tomatoes, cut in half
  • 1 medium red onion, sliced into thin rings
  • ¼ fresh oregano leaves
  • 1 Tbsp red wine vinegar
  • 2 Tbsp extra virgin olive oil
  • Salt
  • Pepper
  • 10-inch flatbread/naan

For the Tomato Salad:

  • 1 lb sweet red cherry tomatoes, cut in half
  • 1 medium red onion, sliced into thin rings
  • ¼ cup fresh oregano leaves
  • 1 Tbsp red wine vinegar
  • 2 Tbsp extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste

For Serving:

  • 10-inch flatbread or naan

Instructions:

1. Prepare the Tzatziki

  • Grate the cucumbers using a coarse grater into a bowl.
  • Add a pinch of salt to the grated cucumber and massage thoroughly with your hands for about 2 minutes to release the water.
  • Squeeze and drain as much water as possible from the cucumber.
  • Combine the drained cucumber with Greek yogurt, grated garlic, chopped dill, chopped mint, and olive oil in a bowl. Mix well.
  • Refrigerate the tzatziki until ready to serve.

2. Make the Tomato Salad

  • In a mixing bowl, combine the halved cherry tomatoes, sliced red onion, fresh oregano leaves, red wine vinegar, and extra virgin olive oil.
  • Season with salt and pepper to taste.
  • Gently mix the ingredients until well combined. Set aside.

3. Prepare the Skewers

  • Cut each Steakhouse Cut lengthwise in half to create long strips.
  • Thread each strip onto a 5-inch wooden skewer.

4. Heat the Flatbread

  • Warm the flatbread or naan in a dry skillet over medium heat for about 1-2 minutes on each side until soft and pliable. Set aside.

5. Grill the Skewers

  • Heat a grill pan over medium-high heat. (You can also use a real grill if available.)
  • Lightly coat the skewers with olive oil.
  • Grill the skewers for about 2½ minutes on each side, or until they are nicely browned and heated through.

6. Assemble the Souvlaki

  • Spread a generous amount of tzatziki onto each warmed flatbread.
  • Place two skewers on each flatbread, arranging them aesthetically.
  • Add three full serving spoons of the tomato salad on top.
  • Drizzle with olive oil and garnish with fresh oregano leaves.

7. Serve

  • Serve immediately, allowing everyone to enjoy the fresh and vibrant flavors of this Mediterranean-inspired dish.
